Blueberry French Toast Casserole
3 8oz French Baguettes
8 oz Mascarpone cheese
2 teaspoons vanilla
2 cups powdered sugar
2 cups fresh blueberries
6 eggs
2 cups milk
3/4 cup granulated sugar
1.5 teaspoons ground cinnamon
Grease a 3 qt. baking dish. Cut baguettes into 1 inch slices, not cutting all the way to the bottom. In medium bowl, beat mascarpone cheese and vanilla until smooth. Beat in powdered sugar and fold in blueberries. Arrange baguettes in baking dish and spoon filling between slices. Whisk together eggs, milk, 1/2 cup of sugar and 1/2 teaspoon of cinnamon. Pour over bread, cover, and chill overnight. Preheat oven to 350. Sprinkle with 1/4 cup of sugar and 1 teaspoon cinnamon. Bake 45 minutes or until set. Drizzle with maple syrup (optional). Enjoy!
